Char Masala

This is a simple formula for an Afghanistani, spice mixture.

Ingredients

3 cm FAIRTRADE cinnamon stick
15 ml FAIRTRADE whole cloves
15 ml Fair Trade cumin seeds
12 FAIRTRADE whole black cardomom pods

Spices

Method

Break up the cinnamon stick into fragments.
Carefully open the pods using a sharp knife to obtain the seeds, discard the cases.
Grind all of the components together using a pestle and mortar.
Store in an airtight container until needed.

To serve

Use as a component of Afghanistani spicy sauces and dishes such as Zamarud Pilau .
