Chicken and Pork Adobo

The Adobo style dish is the national dish of the Philippines.
Use as a main course, adjusting quantities to mix and match on the meats to the number of people.

Ingredients

200 ml cider vinegar
200 ml water
6 cloves garlic
10 ml salt
2 bay leaves
5 ml fresh ground FAIRTRADE black pepper
500 gm chicken breast
1 kg pork
30 ml soy sauce

Method

Preparation
Trim the chicken into serving slices.
Cube the pork.
De-skin the garlic and crush.
Cooking
Mix vinegar, water, pepper, garlic, salt and bay leaves in a large metal pan and bring to the boil.
Add the prepared meats and simmer for 30 minutes.
Add the soy sauce and simmer for 15 minutes.
Remove the meats and reduce the sauce in volume.
Keep the sauce and then, in the casserole, brown the meats in a little cooking oil.
Remove any surplus oil.
Pour the reduced sauce over the meat.

To serve

Serve with FAIRTRADE rice.
