Country Beef Stew

Country of origin: Belarus Simple traditional stew. Serves 4.

Ingredients

500 gm stewing beef
6 potatoes
2 carrots
2 sticks celery
4 small onions
100 ml sour cream
oil, stock,
to taste salt
to taste FAIRTRADE freshly ground black pepper
3 bay leaves

Method

Preparation

Prepare: the potatoes and cut into slices, carrots and cut into chunks, onions and cut into slices, the celery and cut crosswise into slices.
Season the flour and dredge the meat cubes.

Cooking

Brown the meat cubes in a little oil until crisp.
Transfer the meat to a pot, just cover with stock, and add the bay leaves.
Bring to the boil, cover and then simmer for 90 minutes.
Make sure the meat does not dry out.
Add the bay leaves, celery, potatoes, onions and carrots and simmer for 20 minutes.
Add the sour cream and simmer for 5 to 10 minutes.

To serve

Check seasoning and serve hot.

Variation

Turnips, and other roots could be included.
